Potato sukka bhaji







Ingredient:
3 big Potatoes
2 big size onions(dices along the length)
1 tspn turmeric powder
pinch of hing powder is optional
3-4 green chilly slit
6-7 strands coriander leaves
For tempering: 3tbsp oil, 1 tspn mustard seeds, 1 tspn jeera, 1 tspn channa dal n urad daal, some curry leaves

Method:
  • Pressure cook the potatoes till 3-4 whistle. Slightly mash the potatoes and keep aside.






  • Now take oil in a kadai . Prepare for the tempering. Once oil is hot go on adding mustard, channa-urad daal, wait till they crackle, add cumin seeds, curry leaves, green chilly, saute for a minute and then add minced ginger-garlic,  pinch of turmeric powder. Then add onions n fry till onions get nice golden brown colour. Add 1 tbsp salt n 1 tspn sugar to taste.


  • Now add the mashed potatoes into this kadai, mix properly . Finally garnish it with chopped coriander leaves. Squeeze some lemon juice. Give a stir and turn off the gas


Preparation time: 45 mins 
Serves: 2-3
