Brahmi- coconut milk rice





Ingredients:
Fresh Brahmi leaves : 1 bowl
Basmati rice              : 1 medium cup
coconut milk             : 3/4 th medium cup
water                         : 1/4th medium cup
mustard seeds           : 1 1/2 tspn     
cumin seeds              :  2 tspn
green chilly, slit        :  2-3 
hing                           : 1/8 tspn
urad daal                   :  2 tspn
channa daal               : 1 tspn
oil                             : 2 tbspn
ghee/clarified butter : 2 tbspn


Method:
  • Wash the rice and drain it completely. Keep aside
  • Heat oil in cooker pan
  • when hot add mustard seeds, wait till they crackle 
  • then add urad dal n channa daal, roast on medium heat till they turn golden brown . take care not to burn
  • Add green chilli and hing. Saute and add the brahmi leaves. Stir for 2 mins and add in the rice. fry the rice on medium to high flame for 3-4 mins



  • Then add 3/4th cup coconut milk and 1/4 th cup of water. Pressure cook till 2 whistle.


  • Afetr the pressure is released, open the lid and pluff the rice gently with a fork.
  • finally pour some ghee and serve hot
