Methi-coconut dosa also called as menthe kai dosa, is another quick version of dosa, which does not require fermentation. The speciality of this dosa is to include menthe/fenugreek seeds in the diet. Menthe/fenugreek seeds has enormous health benefits. Its believed that person who consumes it on everyday basis can get rid of diabetes. But these fenugreek seeds are very bitter in taste, making it hard to consume directly. One must make a point to consume it atleast in other forms such as in salads, dosas, health drinks etc...
Ingredients:
Rice : 1 glass
grated coconut : 1 handful
methi/ Fenugreek seeds :3-4 tbspn
salt to taste

Makes: about 10-12 dosa

Method:
- Wash n soak rice and methi seeds with excess water for at least 5 hours or overnight
- After 5 hrs, grind them together along with 1 handful of grated coconut
- Grind it to a smooth paste with water
- Take out the batter in a vessel. Add required quantity of salt . Batter should be little thin(free flowing) in consistency
- Heat a non stick dosa pan , take sufficient batter n pour on the pan at the centre. Spread very gently as it may tear away
- put the lid on n cook for 5 mins, open the lid, sprinkle some oil on the edges n then slowly flip it
- cook for few more mins , take out.
- serve hot with any coconut chutney
