Ingredients:
Basmati rice :1 glass
mint/pudina leaves :1bunch
Coriander leaves :1 handful
big cloves of garlic :4-5
ginger :1 inch
green chillies :3-4
onion :1 big sized (sliced along the length)
oil :3 tbsn
ghee :2 tbspn
carrot , dices :1 small bowl
green peas :1 small bowl
beans , chopped :1 small bowl
raisins n cashewnuts
Garam masalas:
cloves :4
bay leaf :1
cinnamon stick :2 inch
cadamon pods :3
pepper corns :6-8
shahi jeera :1 tbspn
javetri/mace :1 small piece
oil :3 tbspn
pulao powder :3/4 tbspn
Method:
- Wash the rice, drain water n keep aside for 15 mins.
- Prepare for the green masala by blending coriander leaves, green chilly, ginger, garlic, pudina leaves
- Take some oil in pressure cooker vessel, once the oil is hot add all the garam masalas and dry fruits. Saute till colour changes
- Add sliced onions and fry nicely till onions becomes golden brown. Now add the green masala and keep frying till the raw smell of pudina disappears. it takes about 5-6 mins for onions n pudina to fry.
- Add the rice and vegetables n fry for few mins. add the pulao powder
- Add about 1 1/4 glass of water. Stir n ckeck for salt and chilly. Pressure cook for only 1 whistle. Turn off the gas
- Leave it untouched till the pressure escapes. Then open the lid. Drizzle some ghee around and pluff up the rice grains gently with a fork
- Serve hot with tomato raita.
